The Broken Yolk Cafe Is Open in San Marcos

The key to success in running a top notch restaurant? Hire the best people available. Start at the top and find an internationally trained manager. Prepare superior menus, arrange for a top chef to look after food preparation and presentation, have attractive, well groomed, and personality-plus waitresses, have an ideal location with plenty of parking, and offer service, service, service.

That’s pretty much a description both of what the Broken Yolk Restaurant is, as well as why they have become such a sensation throughout North San Diego County.


Aleks Kartsub, the owner of Broken Yolk Restaurants, sought out an internationally trained manager to help him grow this concept. He found it in Oscar Babb, a top manager who comes from Barcelona, Spain, who speaks English, Spanish and Catalan fluently, knows the food service business backwards and forwards, is talented in spotting top talent and hiring them and training them in the Broken Yolk Restaurant way of doing things.

Oscar Babb left his beautiful Barcelona, Spain about five years ago. “I wanted to see the world,” he says. “I came to American and I love what I see.”

When he met Aleks Kartsub, “my life changed! He is a wonderful man to work for. Very kind, very generous, very talented. I think we make a great team and work well together. I am proud to work for and with him.”

Kartsub also owns the Broken Yolk Restaurant in La Costa, located at 7670 El Camino Real. When he decided to open a Broken Yolk restaurant in San Marcos, he had just the man in mind to take the helm and operate both locations. None other than Oscar Babb.

The new facility (see below) has a capacity of 260 patrons and chances are it’s close to full for most breakfast and lunch servings. Patron after patron are heard to compliment the staff for their outstanding service and the generous portions in their food, whether breakfast or lunch. It pays to have a big appetite when you dine at the Broken Yolk.

That’s another secret to their success. “Always give the patron more than they pay for,” comes true every day. It’s quite usual for patrons to ask for a box to take home the unfinished meal.

The San Marcos facility opened on May 3rd and have been up and running ever since. They are fully staffed, fully trained, and judging from the smiling faces of those leaving the restaurant after finishing their meal, fully satisfying to their clientele.

They serve breakfast and lunch all day long from 6am to 3pm and are open every day including all holidays.
