He became a Master Chef at the age of 24 - a feat that is unheard of in Germany’s strict Apprentice/Master school discipline of Chefs.

Karl Flugel did it. He started as an apprentice to a Journeyman Chef for three years in Hanover, Germany, working 12-14 hour days on his way to becoming a journeyman Chef and, three years later, a Master Chef. It was a meteoric climb, training in a variety of cities and a variety of European cuisines.

Just to put that in perspective, Karl acknowledges that Emeril LaGasse is a great chef, as is Wolfgang Puck . . .but neither are Master Chefs. In fact, there are only about 80 Certified Master Chefs, rated by the American Culinary Federation, in the United States.

Karl then spent years in Germany honing and perfecting his craft . . . also serving on major cruise lines, and learning more and more about a variety of cultures and their cuisine.

More recently he operated a successful chain of restaurants in the beach area, Simply Delicious, which featured live seafood. Long lines of people waited to dine at his restaurants. He sold the restaurants and retired due to his wife’s serious illness, to care for her. She passed away eight years ago.

This year, Karl decided to get back into the business he loved so much . . . and he opened Fizzz just a few weeks ago.

It is with those impressive credentials that Karl opened one of Escondido’s newest and hippest restaurants, Fizzz, located at 511 West Valley Parkway at Centre City Parkway.

It’s a German Restaurant. All German Beer, no Domestic. German Cuisine and Seafood is featured. Lots of champagne, thus the name, Fizzz!

The menu features such items as Schnitzel, Beef Rouladen, Sauerbraten, Schweine Steak . . plenty of delicious German sausages . . . (the perfect snack with delicious and ice cold German beer!) You want a bratwurst? A Knackwurst? Just let ‘em know and you’ve got it.

We dined there last week. Our first time. We had an excellent Riesling wine which went perfectly with our Cold Oysters on the Half Shell as an appetizer, as well as with our entre’ of Chicken Cordon Bleu.

We’ve all had Chicken Cordon Bleu . . . it’s a favorite of convention banquets. Our dinner was NOT that type of Cordon Bleu! This meal was magnificent, prepared as only a Master Chef could prepare it. Soft, tender, melt-in-your mouth good! The bread was both organic and absolutely delicious. Everything was dead solid perfect.

This is a new restaurant treasure in Escondido with a Chef that truly cares about his food and the ambience that goes with it. He has provided a decor that makes for a home-like feeling, with lots of photos and art work on the walls, a terrific wine list and a selection of imported German Beers that will dazzle even the most demanding beer aficionado.

We’ll look for you. We’ll be easy to spot; we’re the couple with the glasses of Riesling, probably with great big smiles on our faces.
